Tasty lentil-coconut soup

Serving:  6 average doses

You need for this soup:

  • 2 onions
  • 2 tablespoon olive oil
  • 8-decilitre vegetable broth (8 small cups water + 2 vegetable stock cube)
  • 2-decilitre red lentils
  • 200-gram tomato pure
  • 2 teaspoon cumin
  • 2 teaspoon curry powder
  • 2 teaspoon dried chives
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 400-gram coconut milk
  • 1 teaspoon coconut sugar
  • ¾ teaspoon salt
  • A little bit of pepper
  • ½ lime
  • Fresh coriander herbs

Instructions:

Peel the onions and chop them into small pieces. Sauté onion in the boiler with olive oil. Add vegetable broth, red lentils, tomato puree and spices (cumin, curry, chives, coriander, turmeric powders). Cook these about 20 minutes, until lentils are ready. You can see this by tasting when lentils are ready.

In the end add coconut milk, sugar, salt, pepper, lime and fresh coriander herbs. Mix well and cook at least 5 more minutes and the soup is almost ready. Blend the soup in the blender and it’s ready to serve. ❤
