Pureed beetroot soup

You need this soup recipe:

  • 1 onion
  • 2 tablespoon olive oil
  • 500-gram fresh beetroots
  • 2 carrots
  • 2 potatoes
  • 1-liter vegetable broth (1-liter water + 2 vegetable stock cubes)
  • 2-3 tablespoon blackcurrant juice
  • Salt
  • Pepper
  • 1 apple

+crème fraiche


Peel and chop onion. Fry the onion in the boiler with olive oil. Peel and chop carrots, potatoes, and beetroots. Put them also to the boiler and cook a while. Pour the vegetable broth into the boiler and cook until vegetables are soft and ready. Peel and chop the apple. Add apple, salt, and pepper with other ingredients. Let them cook a while.

Use a blender to mix all the ingredients, until it’s puree and ready to serve. Serve the soup with crème fraiche. Here is the same in photos!
